My aim with this book is about reclaiming a lost art. About beautifying abundance. I want to lift the veil on refinement. Bring the kitchen back to earth. Cooking is an art, and if you ask many an artist, for a lot of them it's about the journey of the creation, not the final project. There's more beauty to find in a dish made by your mother with care and passion, then there is from an almost empty plate from a high end chef. Knowing and understanding a dish, its cultural, personal, or historic importance shows the care of the chef creating it and that in itself is worthy of admiration. So, that’s what Beauty in the Mess is all about. Hopefully, I can successfully translate my vision and opinions to you successfully. Not recreating perfection, but embracing imperfections. A dish should firstly taste good before looking good. I don’t want to rewrite the rules of what makes a dish beautiful, I want to remind everyone that beauty is subjective. For beauty is in the eye of the beholder, and there is beauty to be found in the mess.
